The Monsters Inc Brunch Board That Turned Our Kitchen Into Monstropolis
I don’t have some big emotional Monsters Inc origin story for you. I loved it as a kid, I love it now, and Mike Wazowski remains one of the funniest characters Pixar ever made, and Boo is the cutest. That’s it. That’s the whole backstory. But here’s what I do have: a breakfast sandwich that my husband and I are genuinely obsessed with, and a movie that gave me the perfect excuse to put a face on it. A literal face. With a bacon tongue.
I started this brunch series last summer, and it is serieously one of my favorite series I have ever done – it might even get the edge over my dinners! This was hands down one of my favorite brunches we’ve ever done. Everything on this board has eyes. Everything. The sandwiches are staring at you. The muffins are staring at you. The berries are staring at you. At one point I looked over at the drink and it was staring at me too. If you’ve ever wanted to feel watched by your own breakfast, this is the board for you.

Monster McMuffins
Let’s start with the star, because these sandwiches were our favorite breakfast long before they grew eyeballs. I make a huge batch of these on a regular basis and freeze them, and they are the perfect grab and go breakfast. Truly one of my favorite breakfast items ever. So getting to dress them up as little monsters for this board felt like giving an old friend a Halloween costume.

Here’s how to build them. Toast your English muffins and cook up your sausage patties. For the eggs, I use my favorite trick: crack each egg into a greased mason jar lid ring right in the pan, let it cook for a couple of minutes until it sets, then pop the ring off and flip. You get a perfectly round egg that fits the muffin like it was made for it, because it basically was.
Now for the monster part. Take a slice of cheese and cut a zigzag down the middle so you end up with two pieces of pointy teeth. Cook a few strips of bacon and cut them into shorter pieces for the tongues. Save your cheese scraps, because those little triangles are coming back for the egg bites later.
Assemble from the bottom up: English muffin, sausage patty, egg, cheese with the zigzag edge hanging over the front like teeth, and a piece of bacon draped out of the middle like a tongue. Cap it with the top muffin. Then skewer two green olives on toothpicks and stick them into the top so your sandwich has eyes on stalks. That’s it. You now have a breakfast sandwich that looks like it’s about to ask if you’ve filed your scare reports.

I made three of these with slightly different faces and honestly they each developed a personality. The middle one with the marbled cheese has strong middle management energy. He’s seen things on the Laugh Floor.
We Scare Because We Care Egg Bites
Full disclosure: I did not make these egg bites from scratch, and I refuse to apologize for it. These are the bacon and gouda egg bites from Costco and I am fully obsessed with them. They taste exactly like the ones from Starbucks, except you get a whole box for roughly the price of two at the drive thru. This is a brunch board, not a courtroom. Shortcuts welcome.

To monster them up, I took the leftover cheese triangles from the McMuffin teeth and pressed them along the bottom of each egg bite like little fangs, then added half a green olive for each eye. Easy peasy, and they might be the cutest thing on the entire board. A whole plate of them together looks like the morning shift clocking in at the scare floor.
Sulley Donuts
For Sulley, I grabbed mini light blue donuts and gave half of them purple frosting spots, because you cannot have Monsters Inc anything without that blue and purple fur combo. The other half got candy eyes, so the plate ended up as a mix of Sulley’s fur and tiny wide eyed donut creatures who look mildly concerned about being on the board. Zero baking, five minutes of decorating, maximum payoff.
Boo’s Door Pop Tarts
Every Monsters Inc spread needs the door. It’s the most important prop in the movie and I was not about to leave it out.

I made a homemade pop tart version using Pillsbury pie crust. Roll it out, cut it into matching rectangles, spoon a little jam in the center of the bottom piece, lay the top piece over it, and crimp all four edges with a fork. Brush with egg wash and bake according to the package directions until golden. Once they cooled completely, I frosted the top white and piped on the door panels in pink, then added a little yellow candy for the doorknob. I even tucked on a couple of edible flowers because Boo would absolutely decorate her own door if given the chance.
Little Monster Muffins and the Eyeball Berry Bowl
These might be the most feral looking things I’ve ever put on a board and I mean that as the highest compliment. I picked up chocolate muffins from the grocery store, cut a small wedge out of the front of each one for a mouth, and stuck slivered almonds in as jagged little teeth. For the eyes, I layered a thin banana slice under a candy eye so they really pop off the muffin. They came out looking like the background monsters clocking in for their shift and I love them dearly.

Next to them sat the easiest thing on the board: a bowl of mixed berries with a generous handful of candy googly eyes scattered throughout. Strawberries and blueberries, casually surveilling the rest of the table. Ten seconds of effort, endless comedy.
Mike Wazowski Mocktails
You cannot do Monsters Inc without Mike, and this one is barely even a recipe. Green Hawaiian Punch in a coupe glass, plus one large marshmallow with a black pupil drawn on with edible marker, floated right on top. The marshmallow bobs there like a giant eyeball and suddenly your drink is Mike Wazowski. The silhouette is so instantly recognizable it’s ridiculous.

These are a mocktail, so the whole board stays family friendly. But if your brunch skews more date night, a splash of prosecco or champagne turns this into a very legitimate Mike Wazowski mimosa. Mike would want you to have options. He’s a businessman.
The Full Monstropolis Spread
When it all came together on the tray, with the printable signs tucked in between the plates, it genuinely looked like a Monstropolis breakfast cart rolled into our living room. We queued up the movie, grabbed our Mike mocktails, and settled in for one of the coziest brunches we’ve ever done.
