If there’s one character in The Princess and the Frog that absolutely steals the show, it’s Ray. The lovable Cajun firefly is full of heart, always spreading warmth and a little bit of spice—just like this cheesy, jalapeño-packed cornbread.
When planning our Princess and the Frog dinner and a movie night, I knew the meal needed a side that stood out. Gumbo and jambalaya bring rich, bold flavors, so I wanted something that could hold its own but also balance out the heat. Enter: Ray’s Jalapeño Cheddar Cornbread. It’s fluffy, cheesy, just the right amount of spicy, and basically the perfect Southern comfort food.

Ray’s Cheddar Jalapeno Cornbread
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon smoked paprika optional
- 1/4 teaspoon black pepper
- 1/4 cup granulated sugar optional, for slight sweetness
- 1 cup buttermilk
- 2 eggs lightly beaten
- 1/4 cup unsalted butter melted
- 1 cup shredded sharp cheddar cheese
- 1 cup corn kernels fresh, frozen, or canned & drained
- 2 jalapeños finely diced (remove seeds for less heat)
Instructions
- Preheat oven to 400°F. Grease a 9-inch cast-iron skillet or baking dish.
- In a large bowl, whisk together cornmeal, flour, baking powder, salt, smoked paprika, black pepper, and sugar (if using).
- In a separate bowl, whisk together buttermilk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in cheddar cheese, corn kernels, and diced jalapeños.
- Pour batter into the preheated skillet (for a crispier crust) or baking dish.
- Bake for 20-25 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let cool for 5 minutes, then slice and serve warm with butter.
