I have always been a sucker for a good themed dish, but letβs be real – sometimes, we just need something easy, refreshing, and a little on the healthy-ish side. Enter: The One Short Day Fruit Platter.
Inspired by the iconic song from Wicked, this board is basically a trip to the Emerald City in food form – minus the flying monkeys. - 1 cup mandarin orange slices
- 1 cup mango chunks
- 1 cup green grapes
- 1 cup blueberries
- 1 cup red grapes
- 10-12 powdered sugar mini donuts

Ingredients
- cup raspberries
- 1 cup mandarin orange slices
- 1 cup mango chunks
- 1 cup green grapes
- 1 cup blueberries
- 1 cup red grapes
- 6 powdered sugar mini donuts
Instructions
- Wash and dry all the fruit thoroughly.
- On a large serving board, arrange the raspberries in an arc to form the outermost layer of the rainbow.
- Continue building the rainbow by layering the mandarin orange slices, mango chunks, green grapes, blueberries, and red grapes in curved lines.
- Place the powdered sugar mini donuts at each end of the rainbow to resemble fluffy white clouds.
