For my 40th birthday, my husband surprised me with a trip to New Orleans, and one of my first stops was the legendary Dooky Chase’s Restaurant. If you don’t know, the late Leah Chase, a trailblazing chef and activist, was the real-life inspiration for Tiana! Sitting in her restaurant, eating my first-ever bowl of true Louisiana gumbo, I understood exactly why this dish is such an essential part of Southern soul food. Every spoonful was rich, flavorful, and filled with tradition.

Tiana’s Gumbo

This rich, flavorful gumbo is loaded with chicken, andouille sausage, and shrimp, layered with the deep, nutty flavors of a dark roux. Okra is optional, so you can choose whether to include it based on your preference.

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 large onion diced
  • 1 bell pepper diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 1 pound andouille sausage sliced
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 6 cups chicken stock
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt adjust as needed
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce optional
  • 1 can 14 oz diced tomatoes, drained (optional)
  • 1 1/2 cups sliced okra optional, traditional but not required
  • 1 pound shrimp peeled and deveined
  • 3 green onions sliced
  • 1/4 cup fresh parsley chopped
  • Cooked white rice for serving

Instructions

  • Heat the oil in a large, heavy-bottomed pot or Dutch oven over medium-low heat. Slowly whisk in the flour and cook, stirring constantly, until the roux turns a deep brown color, about 30-40 minutes. Be patient—this step is crucial for flavor.
  • Add the diced onion, bell pepper, celery, and garlic to the roux. Stir and cook for about 5 minutes until the vegetables soften.
  • Stir in the andouille sausage and chicken pieces. Cook for another 5 minutes, stirring occasionally.
  • Gradually add the chicken stock, stirring constantly to prevent lumps. Add the bay leaf, thyme, smoked paprika, cayenne, salt, black pepper, Worcestershire sauce, and hot sauce (if using). If adding tomatoes, stir them in now.
  • If using okra, add it to the pot and let it simmer with the gumbo to help thicken it naturally.
  • Bring to a low simmer and let cook uncovered for about 45 minutes to an hour, stirring occasionally.
  • Add the shrimp and cook for 5-7 minutes until they turn pink. Stir in the green onions and parsley. Taste and adjust seasoning as needed.
  • Serve hot over white rice.

Notes

  • If you prefer a thinner gumbo, add more stock.
  • Filé powder (ground sassafras leaves) can be sprinkled over the gumbo after cooking for additional thickening and flavor.

How to Make Gumbo Ahead of Time

This dish is even better the next day! If you want to prep ahead, follow these tips:

  • Make the gumbo base (everything except the shrimp) a day in advance. Store it in the fridge overnight.
  • Reheat on the stove over medium-low heat, adding the shrimp just before serving so they stay tender and juicy.
  • Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
