Beauty and the Beast Brunch Board
Part 1 of My Disney Inspired Brunch Board Series

There are moments when an idea lives in your head for a long time before it finally comes to life. This brunch board is one of those moments. I started planning out this new brunch series in August of last year – but then spooky season came, followed by Christmas, and it just kept getting put off…but I have finally jumped into it – and boy is this going to be fun!!
Welcome to Part 1 of my newest series: Movie-Inspired Brunch Boards, and I honestly could not imagine a more perfect way to kick it off than with Beauty and the Beast.
This board feels romantic, cozy, a little indulgent, and very intentional. It is inspired by some of the most iconic moments from the film, but designed to be something you can actually recreate at home. Impressive, yes. Overwhelming, no.
I split this brunch prep into two days, and that decision is exactly why everything came together so smoothly. I will walk you through both options so you can decide what works best for you.
Before we get into timing and recipes, here is everything that made it onto the board.

I always like to make it easy to recreate the setup, not just the food.
Here is what I used and loved for this board:
- Large wooden serving board
- Soufflé ramekins
- Rose silicone molds
- Coupe glasses for the mimosas
- Mini plates that fit perfectly on the board
How to Make This Brunch Board Without Stress
If you are doing everything the same day, this board is doable, but it will feel busy.
Personally, I split it into two days, and it took about 45 minutes of prep the day before. That small bit of planning made the day of feel calm and fun instead of rushed.
What I Prepped the Day Before
This is my recommended approach.
- Freeze the cranberry juice in rose molds for the mimosas
- Make the apple puff pastry roses
- Make the Grey Stuff whipped cream
- Mix the French toast custard
- Slice the baguette
- Wash and prep all fruit
Once these things were done, everything else came together quickly.
What to Cook the Day Of
On the day of serving:
- Cook the pancakes, French toast, and sausages first
- Hold them warm in a low oven
- Assemble the board except for the soufflés
- Bake the soufflés last and place them on the board immediately for photos
You only get a few minutes with a beautifully puffed soufflé, so save those for the very end right before service!

The Enchanted Rose

Apple Puff Pastry Roses
These are simpler than they look and absolutely worth it.
Ingredients
- 1 sheet puff pastry, thawed
- 2 apples, thinly sliced
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- Lemon juice
- Powdered sugar for dusting
How to Make Apple Puff Pastry Roses
These look fancy, but once you understand the order of operations, they’re surprisingly simple. The key is making the apples flexible and letting the puff pastry do the work.
Step 1: Slice the Apples Thin
Use a sharp knife or mandoline and slice the apples very thin, about 1/8-inch thick. You want half-moon slices, not full rounds.
Place the slices in a bowl and toss them with a little lemon juice to prevent browning.
Step 2: Soften the Apples
This is the most important step.
Add a splash of water to the bowl and microwave the apple slices for 2 to 3 minutes until they are soft and bendable. You should be able to curve them without breaking. If they still feel stiff, microwave for another 30 seconds.
Drain and let them cool slightly so they are easy to handle.
Step 3: Prepare the Puff Pastry
Roll out one sheet of thawed puff pastry just enough to smooth the seams.
Cut it into long strips, about 1 1/2 to 2 inches wide.
Brush each strip lightly with melted butter, then sprinkle with cinnamon and sugar.
Step 4: Arrange the Apples
Lay the apple slices along one long edge of the pastry strip so that the rounded edges stick out above the dough. Overlap the apples slightly, like roof shingles.
The apples should peek over the top edge. That is what creates the rose petals once baked.
Step 5: Fold and Roll
Fold the bottom half of the pastry strip up over the apples, trapping them in place.
Starting at one end, gently roll the strip up into a spiral. Go slowly and keep it loose. The looser the roll, the prettier the rose.
Step 6: Bake in a Muffin Tin
Place each rose into a greased muffin tin. This helps them hold their shape as they bake.
Bake at 375°F for 35 to 40 minutes, until the pastry is golden and the apples are tender.
If the tops start browning too quickly, loosely cover with foil for the last 10 minutes.
Step 7: Finish
Let the roses cool completely. Right before serving, dust lightly with powdered sugar.

The Enchanted Rose Pastry
Ingredients
- 1 sheet puff pastry thawed
- 2 red apples Honeycrisp or Pink Lady work best
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon melted butter
- Powdered sugar for finishing
Instructions
- Preheat oven to 375°F. Grease a standard muffin tin and set aside.
- Slice apples very thin into half-moon slices, about 1/8-inch thick. Place in a bowl and toss with lemon juice.
- Add a splash of water to the bowl and microwave apple slices for 2 to 3 minutes, until soft and flexible. The apples should bend easily without breaking. Drain and allow to cool slightly.
- Roll out puff pastry just enough to smooth seams. Cut into strips about 1 1/2 to 2 inches wide.
- Brush each pastry strip lightly with melted butter. Sprinkle evenly with sugar and cinnamon.
- Arrange apple slices along one long edge of each pastry strip, overlapping slightly, with the curved edges extending above the dough.
- Fold the bottom half of the pastry strip up over the apples to secure them in place.
- Starting at one end, gently roll the strip into a loose spiral to form a rose shape.
- Place each rose into the prepared muffin tin.
- Bake for 35 to 40 minutes, until puff pastry is golden and apples are tender. If tops brown too quickly, loosely cover with foil for the final 10 minutes.
- Cool completely. Dust lightly with powdered sugar just before serving.
The Grey Stuff Pancakes

Yes, It’s Delicious!
I went back and forth on whether to use a boxed pancake mix here, but I’m so glad I didn’t. A simple homemade pancake batter makes a huge difference, especially when you’re folding in Oreos and it really only takes a couple extra minutes – but if you are short on time or ingredients, your favorite pancake mix works great!!
These pancakes are soft and fluffy, with just enough structure to hold the Grey Stuff topping without collapsing. The key is not overmixing the batter and waiting to fold in the crushed Oreos until the very end. You want those cookie pieces to stay distinct so you get little bites of cookies and cream throughout.
I also like to cook these low and slow. Because of the Oreos, they brown a bit faster than plain pancakes, so medium-low heat gives you golden pancakes without burning the cookies.
Once cooked, I held them warm in a low oven while finishing the rest of the board. They stayed fluffy and perfect right up until serving.

Homemade Oreo Pancakes
Ingredients
- 1½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1¼ cups milk
- 1 large egg
- 2 tablespoons melted butter slightly cooled
- 1 teaspoon vanilla extract
- 8 Oreo cookies crushed into small pieces
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk milk, egg, melted butter, and vanilla until combined.
- Pour the wet ingredients into the dry ingredients and gently stir just until combined. The batter should be slightly lumpy. Do not overmix.
- Fold in crushed Oreos gently.
- Heat a nonstick skillet or griddle over medium-low heat and lightly grease with butter.
- Scoop about ¼ cup batter per pancake onto the skillet.
- Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes. Flip and cook an additional 1 to 2 minutes until golden.
- Transfer cooked pancakes to a baking sheet and keep warm in a 200°F oven until ready to serve.
- Serve topped with Grey Stuff whipped cream and extra Oreo crumbs if desired.
Let’s Talk About the Grey Stuff Whipped Cream

There are a lot of ways to make the Grey Stuff, but for a brunch board, I wanted something light, not heavy or overly sweet. This version leans more toward a whipped topping than a frosting, which makes it perfect for pancakes and easy to pipe or spoon right before serving. It is simple, forgiving, and one of those recipes that looks impressive without actually being complicated. If you are short on time, this is also a great make-ahead element that takes a lot of pressure off the day of.

Grey Stuff Whipped Cream
Ingredients
- 1 cup cold heavy whipping cream
- 2 tablespoons cream cheese fully softened
- 1/4 cup finely crushed Oreos
- 1 tablespoon Oreo pudding mix optional, for stabilization
- 1/2 teaspoon vanilla extract
Instructions
- In a chilled mixing bowl, whip the heavy cream until soft peaks form.
- Add the softened cream cheese and vanilla. Continue whipping just until smooth and fluffy. Do not overwhip.
- Fold in the crushed Oreos gently.
- If using, sprinkle in the Oreo pudding mix and fold until just combined. This helps the Grey Stuff hold its shape longer, especially for piping or serving on a warm board.
- Chill for 20 minutes before using to allow the topping to set slightly.
- Spoon or pipe onto pancakes just before serving.

Baguette French Toast

Marie, the Baguettes. Hurry Up.
I need to talk about this for a second because it completely surprised me. I had never made French toast with baguettes before, and I honestly don’t think I can go back. The outside gets beautifully golden and crisp, while the inside stays soft and custardy without ever feeling soggy. It feels elevated but still comforting, and it fits this brunch board perfectly. If you take only one idea from this entire spread, make it this one. It is phenomenal and absolutely worth the extra step of slicing a baguette instead of reaching for sandwich bread.

Baguette French Toast
Ingredients
- 1 large baguette sliced into 1-inch pieces
- 3 large eggs
- 1 cup whole milk or half-and-half
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Pinch of nutmeg optional
- Pinch of salt
- Butter for cooking
- Powdered sugar for serving
Instructions
- In a shallow bowl, whisk together the eggs, milk, vanilla, cinnamon, nutmeg if using, and salt until fully combined.
- Dip each slice of baguette into the custard, allowing it to soak for about 10–15 seconds per side. The bread should be well coated but not falling apart.
- Heat a large skillet or griddle over medium heat and add a small amount of butter.
- Cook the soaked baguette slices in batches, about 2–3 minutes per side, until golden brown and lightly crisp on the outside.
- Transfer cooked French toast to a baking sheet and keep warm in a 200°F oven while finishing the remaining slices.
- Just before serving, dust with powdered sugar.
Notes
- Use a baguette that is slightly stale for the best texture
- Do not oversoak the bread or it may become too soft
- Medium heat allows the custard to cook through without burning
- This French toast holds well and can be kept warm for up to 30 minutes
Brunch-Friendly Cheese Soufflé

I know a soufflé can sound intimidating, but I promise this one is much more forgiving than its reputation. For a brunch board, I wanted something that felt elegant and classic, but still realistic to make at home without stress. This version is light, cheesy, and soft rather than ultra-fussy, which makes it perfect for brunch and for serving on a board. The key is timing. I saved these for absolutely last, baked them while everything else was already warm and ready, and placed them on the board immediately. You only get a few minutes with that beautiful puff, but that is all you need. They are worth it every single time.
It also fits the spirit of Beauty and the Beast so well. Simple ingredients, a little technique, and a big payoff.

Brunch-Friendly Cheese Soufflé
Ingredients
- For the ramekins
- 1 tablespoon butter softened
- 2 tablespoons finely grated Parmesan cheese
- For the soufflé
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 3/4 cup whole milk
- 1 cup shredded Gruyère cheese
- 3 large eggs separated
- 1/4 teaspoon salt
- Pinch of black or white pepper
- Pinch of nutmeg
Instructions
- Preheat oven to 375°F. Generously butter the ramekins, brushing upward along the sides. Dust with Parmesan cheese and tap out the excess. Place ramekins on a baking sheet and refrigerate while preparing the batter.
- In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, until smooth.
- Slowly whisk in the milk and continue cooking until the mixture thickens to a smooth, creamy sauce.
- Remove from heat and stir in the shredded Gruyère, salt, pepper, and nutmeg until the cheese is fully melted.
- Stir in the egg yolks one at a time until fully incorporated. Set aside.
- In a clean bowl, whip the egg whites until soft peaks form.
- Gently fold one third of the egg whites into the cheese base to lighten it. Carefully fold in the remaining egg whites until just combined. Do not overmix.
- Divide the mixture evenly between the prepared ramekins, filling each about three-quarters full. Run a clean finger around the inside edge of each ramekin to help the soufflés rise evenly.
- Bake for 12–15 minutes, until puffed, lightly golden, and set around the edges.
- Serve immediately.
Enchanted Rose Mimosas
This is one of my favorite details.
I froze cranberry juice in rose molds. For me, I used sparkling water since I am doing Dry January. For my husband, I topped his with champagne.
Both are beautiful. Both feel special.

Final Assembly Tips
- Build height in the center
- Use small bowls and plates to create levels
- Fill gaps with fruit and croissants
- Add soufflés last
- Take photos immediately
