What’s on the Menu – Moana Dinner and a Movie
Appetizer: Coconut Shrimp
Our Moana Dinner and a Movie night began with some crispy, golden coconut shrimp. To be honest, this is one of our favorite appetizers to order when we were out, so I was really excited to make this one. Inspired by the abundance of coconuts on Moana’s island of Motunui, these shrimp are coated in a crunchy coconut crust and served with a sweet and tangy dipping sauce. It was the absolute perfect appetizer to start our meal. I may or may not have eaten half the coconut shrimp while plating it – because once you taste that crispy coconut coating, you’ll understand why!

Main Course: Chicken Skewers and Pineapple Fried Rice
For the main course, I wanted to serve something that would transport us right to the heart of the film – sorry Hei Hei. Enter the savory chicken skewers, marinated in a blend of island-inspired spices and grilled to perfection. They’re paired with pineapple fried rice, served in a carved-out pineapple boat for that extra wow factor. The rice is packed with juicy pineapple chunks and vibrant vegetables, making it as flavorful as it is visually stunning. It was almost too beautiful to eat….Almost!!

Dessert: Pineapple Upside-Down Cupcake
No Moana Dinner and a Movie night would be complete without a sweet ending, and these pineapple upside-down cupcakes deliver! Inspired by the tropical fruits of the pacific, these cupcakes feature caramelized pineapple slices atop moist, buttery cake. Each bite is a perfect balance of sweet and refreshing, and they look absolutely stunning on the table. Trust me, your guests – and especially kids will love these!
Cocktail: Te Fiti Green Cocktail
To complete our Moana Dinner and a Movie experience, I crafted a stunning Te Fiti inspired green cocktail. This drink is a visual masterpiece, with its vibrant green hue and dried flower garnish, reminiscent of the lush, life-giving magic of Te Fiti herself.
