I’ll be honest with you. I am a Mark Ruffalo Hulk girl. I have always been a Mark Ruffalo Hulk girl. The quiet intensity, the rumpled sweater, the way he says “that’s my secret, Cap” and then immediately becomes a giant green rage monster and punches a Leviathan in the face. Chef’s kiss. That’s MY Bruce Banner.
So sitting down to watch the 2008 Edward Norton version for this cookbook was, let’s say, an act of devotion. Not to the film, exactly. To my husband.
We were watching The Avengers during our big MCU marathon and there’s a moment where Bruce Banner is standing there about to transform, and Tony Stark asks him what his secret is. And Banner says, totally calm, “I’m always angry.” My husband literally paused the movie. He looked at me. He said, “You have to make the Always Angry Martini.”
He is not a guy who gets excited about the food. He shows up, he eats, he LOVES it – but he gives me full creative control. He is a wonderful sport and I adore him for it. But this? He had a concept. He had a NAME. And if that meant I was making a chapter around The Incredible Hulk instead of slotting that cocktail into The Avengers spread, then that is what we were doing. Always Angry Apple Martini
My husband named it and I built it, and I think that’s a pretty healthy partnership. The drink itself is a green apple base with fresh lime, a blue curaçao slow-pour that creates this green-to-purple layered effect in the glass, and a blue sanding sugar rim that makes the whole thing look like it belongs in a gamma radiation lab. You can make it with vodka or without. Either way, you let the colors swirl naturally and you serve it immediately before they blend together, because the magic is in that moment right before it all becomes one color.
Bruce Banner spent the whole movie running from what he was. This drink leans in.


Classified Experiment (Tomatillo Shrimp Cocktail)
The green theme for this The Incredible Hulk Dinner and a Movie is obviously unavoidable, and I committed to it fully. The Classified Experiment shrimp gets seared and served over a tomatillo sauce that I kept really smooth and pourable, specifically so I could serve it in mini beakers and petri dishes. And yes, that detail matters. Shrimp in a bowl is an appetizer. Shrimp in a beaker sitting in tomatillo sauce with a lime wedge balanced on the rim is a classified government experiment gone deliciously wrong.
The tomatillo sauce has jalapeño, parsley, garlic, lime, and just a touch of ketchup to round it out. It’s bright and slightly tangy and the perfect thing to eat while Edward Norton is running across rooftops in Brazil trying not to Hulk out in public.


The Abomination Double Smash Burger + Steak Fries with Gamma Green Sauce
A Hulk dinner needed a smash burger. That was never in question. What I didn’t want was a basic smash burger that just happened to be on the table during a Hulk movie. I wanted it to feel like it belonged. So I added chimichurri and homemade pickled red onions, which gave it this bright, herby, slightly tangy thing that cuts right through the richness of the beef. The chimichurri kept the green going. The pickled onions gave it color. The double stack gave it appropriate Hulk energy.
Now. About the meat. I bought ground beef from the butcher a few days before this shoot. When I went to use it, it had already gone off. In the middle of a full production. I stood in my kitchen and had a small internal meltdown and then I remembered I had wagyu ground beef in the freezer. I had never cooked with wagyu ground beef before. I gave it a quick thaw and used it. These were some of the best burgers I have ever made. The fat content, the flavor, the way it formed that crust when it hit the pan. Total accident. Absolutely repeating it on purpose from now on.
The steak fries got the same chimichurri aioli treatment for the Gamma Green Sauce, and if that sauce looks familiar it’s because a version of it showed up in the Iron Man chapter too. A good sauce deserves a sequel.

The Glow (Lime Cheesecake Jars)
Graham cracker crust on the bottom. Lime cheesecake layer in the middle. A thin pour of lime jello on top that sets into this jewel-green layer that makes the whole jar glow from the inside. Then whipped cream, blue sprinkles, a lime wedge. I cannot overstate how good these were, and I cannot overstate how much the visual does for them. The trick with the jello layer is to let it cool slightly before you pour it so it doesn’t melt the cheesecake underneath. Let it just barely start to thicken, then pour slowly. The result is that perfect distinct layer you can see through the glass.
They tasted like a key lime pie decided to become a Hulk villain. I mean that as the highest possible compliment.
