It’s no wonder that a Princess and the Frog dinner wouldn’t be complete without it! Tiana’s love for good food and hard work is the soul of this movie, and this jambalaya fits right in as a warm, comforting, and deeply flavorful dish worthy of her menu at Tiana’s Palace.


The Jambalaya Challenge – A Cooking Redemption

If you’ve followed along with my Disney Date Night meals, you know that rice is not my best friend. I love eating it, but cooking it? Not so much. It either turns out too crunchy or too mushy—and for a dish like jambalaya, where the rice soaks up all that Creole goodness, there’s no room for error.

So, I took on the challenge. No shortcuts. No prep ahead. Just me, a big ol’ Dutch oven, and a whole lot of faith in Tiana’s culinary spirit.

And guess what? This jambalaya came out absolutely perfect. The rice was tender, the sausage and shrimp were packed with smoky and savory flavors, and every bite had just the right amount of heat.

Bringing Tiana’s New Orleans to Life

This dish was the missing piece in our Princess and the Frog movie night. While I had made gumbo before, jambalaya wasn’t originally on my menu back in 2021. But knowing how much love and tradition go into this dish, I knew it had to be included.

And honestly? It was the perfect addition. The smoky andouille sausage, the juicy shrimp, the bold Creole spices—it all came together in one glorious, flavor-packed pot. My husband and I agreed: this jambalaya is here to stay.

Authentic New Orleans Jambalaya

This classic Creole jambalaya is packed with bold flavors, featuring andouille sausage, chicken, shrimp, and perfectly cooked rice. The key to getting the rice just right is to use the right liquid-to-rice ratio, resist stirring while it simmers, and let it steam at the end.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound andouille sausage sliced
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 large onion diced
  • 1 bell pepper diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 2 teaspoons salt adjust to taste
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 14.5 oz can diced tomatoes, drained
  • 2 cups long-grain white rice uncooked, do not rinse
  • 4 cups chicken stock
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon hot sauce optional
  • 2 bay leaves
  • 1 pound shrimp peeled and deveined
  • 3 green onions sliced
  • 1/4 cup fresh parsley chopped

Instructions

  • Heat the oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the andouille sausage and cook until browned, about 5 minutes. Remove with a slotted spoon and set aside.
  • Add the chicken pieces to the same pot. Cook for about 5 minutes until browned on all sides. Remove and set aside with the sausage.
  • Add the onion, bell pepper, and celery. Cook for 5 minutes until softened, stirring occasionally. Add the garlic and cook for another 1 minute.
  • Stir in salt, black pepper, smoked paprika, thyme, and cayenne. Add the diced tomatoes and cook for 2 minutes.
  • Return the sausage and chicken to the pot. Add the uncooked rice and stir well to coat it in the seasonings.
  • Pour in the chicken stock, Worcestershire sauce, and hot sauce (if using). Add the bay leaves. Stir everything once to combine, then stop stirring—this prevents mushy rice.
  • Bring to a gentle simmer over medium-low heat. Cover and cook for 20-25 minutes, undisturbed. Do not lift the lid or stir while cooking.
  • After 20 minutes, check the rice. If it’s almost done, add the shrimp on top, cover again, and cook for 5 more minutes until shrimp turn pink.
  • Remove from heat, keep covered, and let it rest for 10 minutes—this ensures perfectly fluffy rice.
  • Fluff the jambalaya with a fork, remove the bay leaves, and stir in the green onions and parsley.

Notes

Pro Tips for Perfect Rice

  • Use long-grain white rice (like jasmine or standard long-grain). Short-grain or sticky rice will turn mushy.
  • Do NOT rinse the rice—rinsing removes the starch that helps absorb the flavors.
  • Don’t stir after adding the stock—stirring releases starch and makes the dish gummy.
  • Keep the lid on—steam is crucial for even cooking.
  • Let it rest after cooking—this allows any excess moisture to be absorbed for fluffy rice.
