The Grinch Christmas Brunch Board (Because Who Says Brunch Can’t Be a Little Unhinged)

A festive holiday brunch that is equal parts chaos, nostalgia, and green food coloring

I did not wake up one morning planning to turn the Grinch into a full-blown Christmas brunch situation.
But here we are.

At this point, the Grinch might as well have a guest room in our house, because this is actually our third Grinch inspired creation this year. We kicked things off with a full Grinch snack board, followed it up with a Grinch dinner that quickly became one of my favorite meals we have ever done, and now we have arrived at brunch. Can you tell we love the Grinch around here?

Somewhere between the neon green pancakes, Who Pudding, and sausages labeled Roast Beast, I realized this was not just a brunch. This was the moment that officially launched our brand new Brunch Series.

And here is the funny part.
I actually built out this entire series back in September.
Twelve brunches. Completely planned. Fully mapped. Ready to go for the new year. Then Halloween hit. Then Christmas hit. Then the Grinch decided to grab me by the shoulders and whisper, “Hey… brunch?”

I had no choice. I stopped everything I was doing and brought this board to life right in the middle of holiday chaos. And honestly, it was the best possible way to kick off something new.

Why the Grinch for brunch

The Grinch is peak Christmas – and I don’t know if it’s just in my head, but he is everywhere this year! In the stores, in the food, all over social media – I cannot escape Mr. Grinch.

We are late risers, so this meal just felt right.

This board pulls inspiration straight from Whoville with playful names, bright colors, and foods that feel nostalgic without being complicated. It is the kind of brunch you put together on Christmas morning, during a holiday movie marathon, or when you want your guests to immediately say, “Okay, this is cute.”

Also, let’s be honest. Green food just hits different in December.

What’s on the Grinch brunch board

Everything on this board is designed to feel fun, approachable, and easy to recreate. No culinary degree required. Just vibes.

Grinch Cakes
Neon green pancakes stacked high, topped with whipped cream, green frosting, and heart sprinkles. Bright, festive, and unapologetically Grinchy.

Grinch Cakes

Homemade or boxed mix. Your call.

Homemade pancake option:

• Your favorite pancake batter
• Neon green food coloring

Cook pancakes as usual, tinting the batter green. Stack, top with whipped cream, drizzle with whipped cream, and finish with heart sprinkles.

Shortcut option:

• Boxed pancake mix
• Green food coloring

Who Pudding
A layered yogurt parfait with strawberries, granola, green tinted yogurt, whipped cream, and heart sprinkles. Sweet, fresh, and very Whoville approved.

Who Pudding

This is a simple layered parfait situation.

Ingredients:

• Vanilla yogurt
• A few drops of green food coloring
• Strawberries, chopped
• Granola
• Whipped cream
• Heart sprinkles

How to assemble:

1. Mix a small amount of green food coloring into vanilla yogurt until bright green.
2. Layer granola, strawberries, green yogurt, and repeat.
3. Top with whipped cream and heart sprinkles.
4. Add a printable Who Pudding label.

Who Hash
Crispy frozen hashbrowns served in a can, because yes, presentation matters. Finished with a printable Who Hash label I found on etsy for the full effect.

• Use a frozen bag of hashbrowns
• Cook until crispy
• Serve in a clean can
• Add a Who Hash label from Etsy

Roast Beast
Breakfast sausages labeled Roast Beast, because the Grinch demands commitment to the bit.

Grinch Drinks
A bright green brunch cocktail or mocktail made with a splash of blue curaçao, 1-2 oz orange juice, and either champagne, sparkling water, or lime soda. Garnished with heart shaped strawberries because it did grow three sizes that day. 🙂

Grinch Drinks

Ingredients:

• Blue curaçao or non alcoholic blue syrup
• Orange juice
• Champagne, sparkling water, or lime soda

Add blue curacao to the bottom of a champagne flute. then add orange juice. Top with bubbles. Garnish with strawberries.

Cinnamon Rolls
Classic Pillsbury cinnamon rolls tinted green and topped with heart sprinkles. Easy, nostalgic, and always a crowd favorite.

• Pillsbury cinnamon rolls
• Green food coloring
• Heart sprinkles

Tint the icing green, frost while warm, and sprinkle generously.

How to assemble your Grinch Christmas brunch board

This board looks wild, but the assembly is actually very simple once you know the order. Think of it like building Whoville in tray form. You want height, color, and balance… and a little chaos. Always a little chaos.

Here is exactly how I built mine.

Step 1. Start with your biggest items

I always begin with the tallest pieces so I can anchor the back of the board.
For this brunch, that meant the drinks.
Set them in the back corners so they frame the entire board and keep the eye moving upward.

Step 2. Add your main plates

Next, place the substantial items that need their own dish.
I added:
• The Who Hash plate
• The Grinch Cakes stack

These pieces give the board structure and start filling the center.

Step 3. Bring in the Who Pudding

The Who Pudding sits beautifully toward the middle because the bowl adds height without blocking anything behind it.
It also gives you a bright pop of green right where you want attention.

Step 4. Add the Roast Beast

Place the sausages in a small dish where there is open space.
This helps balance the colors and keeps the board from feeling too sweet-heavy on one side.

Step 5. Tuck in the cinnamon rolls

These are your flexible filler pieces.
Place them wherever you have gaps, curves, or edges that need softness or texture.
They bring warmth and that classic Christmas brunch energy.

Step 6. Fill all remaining space with cereal

This is the magic step.
Grinch Cereal fills the gaps, adds color, and makes the whole board feel cohesive and full.
Sprinkle it around each dish and press it gently into empty spaces so everything looks intentional.

Step 7. Add your themed picks and tags

This is where the board comes alive.
Grinch, Cindy Lou, trees, little signs… these bring the story together and turn brunch into a full Whoville moment.
Add them last so they stay upright and visible.

The start of a new brunch tradition

This Grinch Christmas brunch board is officially the very first installment in a brand new brunch series that has been sitting in my drafts since September. Twelve brunches are already planned for the new year, and I cannot wait to share all of them with you.

This one happened because inspiration struck mid December and I just had to bring it to life. And honestly, there was no better way to start.
