The Lion King Dinner and a Movie Night

I saw The Lion King on opening night at the El Capitan Theatre in Hollywood. If you have never been to the El Capitan, put it on your list immediately. It is a stunning historic theater in the heart of Hollywood where Disney has hosted premieres for decades, and back in the 90s they did a full live stage show before every screening. I was a kid sitting in that theater watching performers in elaborate costumes bring the Pride Lands to life before the movie even started, and I have never fully recovered from it.
The Lion King has lived in my chest ever since. I still sing I Just Can’t Wait to Be King at full volume every single time. Matt has accepted this about me.
This was one of the very first dinner nights I ever created, and it holds a very specific place in my heart because it is the dinner that changed everything for me. But we’ll get to that.

The Night Everything Changed
Matt and I were on our way to Las Vegas for our very first bowling tournament in our first league together. I had literally just posted this video before we got in the car and I remember thinking it felt different from anything I had posted before. I had just started adding cocktails to my dinner nights, and the Serengeti Sunset was the first drink that really felt like it belonged on the same table as the food.
We were barely on the road when my phone started buzzing. Then it kept buzzing. Every time I opened Instagram there were hundreds of new notifications. By the time we got to Vegas the video was taking off in a way I had never experienced before.
I went from around 60,000 followers to 100,000 within a couple of months. After years of grinding, something finally clicked. It was the Lion King that opened the floodgates. The Pride Lands, apparently, have very good internet.
Why I Remade This Whole Dinner
Fast forward to recently. Matt and I were standing in line at AMC for a movie, minding our own business, when I spotted a Timon and Pumbaa tiki mug at the concession stand. I did not deliberate. I bought it immediately. And standing there holding this ridiculous perfect ceramic mug with Timon stacked on top of Pumbaa, I decided it was time to redo the whole dinner and give it the photos it deserved.
Best impulse purchase I have ever made.

Serengeti Sunset: A Cocktail Worthy of the Pride Lands
The cocktail that started everything. This is my Lion King spin on a classic tequila sunrise, built to look like the Pride Lands at golden hour. Bright citrus, a gorgeous gradient, and a garnish that makes the whole table feel like an event before anyone has taken a single bite.
When I first posted this dinner, the Serengeti Sunset was the moment people stopped scrolling. It still is.


Simba-Inspired Crudité Board: A Bold and Colorful Appetizer
For the appetizer, I wanted to capture the energy and color from one of my favorite Lion King scenes: “I Just Can’t Wait to Be King.” This scene is bursting with bright colors and playful jokes, and lots of movement, so I channeled that into a vibrant Simba-Inspired Crudité Board. It was filled with bold, fresh veggies like bell peppers, cucumbers, and carrots, all arranged to look like Simba while he is crooning this tune. The hummus in the center served as the perfect dip.
The beauty of a crudité board is in its simplicity and creativity. By using big, bright veggies, this appetizer didn’t just look good, it tasted amazing, too. Plus, it’s a healthy and refreshing way to kick off the night before the more indulgent courses come rolling in.

Timon and Pumba’s Bug Skewers
Hakuna Matata means no worries. It also apparently means eat the bugs. These fruit skewers are decorated to look like ladybugs using strawberries, grapes, and a little chocolate detail work, and they are genuinely one of my favorite things I have ever put on a table. They look incredible, they taste great, and every single person who sees them does a double take.

Pumbaa’s Twice Baked Potatoes – The Ultimate Comfort Food
These are the potatoes people always ask me to bring. Every gathering, every holiday, every time someone finds out I make them, the request follows. Fluffy mashed potato filling, gooey cheddar, crispy bacon, green onions, all stuffed back into a crispy potato shell and baked until everything is melted and golden and perfect.
I have been making these for years. They are genuinely one of the best things I have ever created and they deserve to be on every table, Lion King themed or otherwise.

The Best Twice Baked Potatoes
Trust me when I say, these are the best potatoes you’ll ever make! Your friends and family will be begging for you to make them over and over again. These Twice Baked Potatoes are ooey, gooey, cheesy bacon perfection.
Wild Wildebeest Ribeyes: The Star of the Show
For the main course of our Lion King dinner and a movie night, I wanted to create something that felt bold, indulgent, and absolutely unforgettable. Enter the Wild Wildebeest Ribeyes, cast iron ribeye steaks, cooked to perfection and topped with a homemade garlic and herb compound butter that took the flavors to a whole new level. This dish was truly to die for – my husband even said it was his favorite steak he’s ever had. That’s saying something, considering how much we love indulging ourselves at fancy steak restaurants.
The real magic of this dish lies in the garlic and herb compound butter. It is seriously the most delicious addition to a steak, and it really just takes a few minutes. Placked with fresh minced garlic, parsley, rosemary, thyme, and just a splash of lemon – this compound butter is truly TO. DIE. FOR. . It’s a game-changer and elevates this meal to a fine-dining experience, right at home. Whenever I make this butter, I am sure to make extras as it is also amazing as a base for gravy or with potatoes and veggies!.
If you’re looking to impress your guests (or just treat yourself to an incredible meal), these ribeyes are a must. They were the star of the show and definitely set the bar high for the rest of the meal.

Bold Veggies with Balsamic: A Colorful Side for the Pride Lands
To complement the rich flavors of the Wild Wildebeest Ribeyes and Pumba’s Twice Baked Potatoes, I wanted to add a side dish that was bold, colorful, and fresh. Enter the sautéed carrots, zucchini, and red onions with a drizzle of balsamic glaze. These veggies were cooked just enough to bring out their natural sweetness while still maintaining a vibrant, slightly crisp texture. The balsamic added a tangy, slightly sweet finish that tied the entire plate together. They were so easy to make, and they complimented the richness of the other dishes wonderfully.

Bug Grub Brownies: A Sweet and Playful Dessert
Timon and Pumbaa have been trying to get us to eat bugs for thirty years. The brownies are my compromise. Double fudge chocolate brownies topped with crushed Oreo dirt, gummy worms, and gummy bugs crawling out of the surface. I am a brownie person to my core and these made my chocolate loving heart very happy. They also look completely unhinged in the best possible way.
