Ingredients

  • 1 bunch broccolini about 12 oz
  • 2 tbsp olive oil
  • ½ tsp kosher salt adjust to taste
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp red pepper flakes optional, for a little heat
  • Juice of ½ lemon optional
  • 2 tbsp grated Parmesan optional, but highly recommended

Instructions

Oven Method

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • Trim any rough ends off the broccolini and spread it out on the baking sheet.
  • Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and red pepper flakes. Toss to coat evenly.
  • Roast for 12-15 minutes, flipping halfway through, until the edges are slightly charred and crispy.
  • Remove from the oven and, if you’re feeling fancy, squeeze fresh lemon juice over the top and sprinkle with Parmesan.
  • Serve immediately and enjoy your Wicked-themed greens.

Air Fryer Method

  • Preheat the air fryer to 375°F (190°C).
  • Toss the trimmed broccolini with olive oil, salt, pepper, garlic powder, and red pepper flakes in a bowl.
  • Arrange in a single layer in the air fryer basket.
  • Air fry for 8-10 minutes, shaking the basket halfway through, until tender and crispy on the edges.
  • Finish with lemon juice and Parmesan, if desired, and serve immediately.

  • For extra flavor, try drizzling with balsamic glaze or a touch of honey before serving.
  • If you can’t find broccolini, regular broccoli works too—just cut it into florets and adjust the cook time slightly.
