Ingredients
4bone-in pork chopsabout 1 inch thick
1tablespoonolive oil
1teaspoonkosher salt
1teaspoonblack pepper
1teaspoongarlic powder
1teaspoonsmoked paprika
1/2teaspoononion powder
2tablespoonsbutter
Instructions
Remove the pork chops from the refrigerator 20-30 minutes before cooking.
Pat the pork chops dry with paper towels.
In a small bowl, combine the salt, pepper, garlic powder, smoked paprika, and onion powder.
Rub the pork chops with olive oil, then season generously on both sides with the spice mixture.
Heat a large cast iron skillet over medium-high heat.
Add the pork chops and cook for 4-5 minutes per side, or until a deep golden-brown crust forms.
Reduce the heat to medium and add the butter to the skillet. As the butter melts, spoon it over the pork chops for 1-2 minutes.
Continue cooking until the pork chops reach an internal temperature of 145°F.
Transfer to a plate and let rest for 5 minutes before serving.
For the juiciest pork chops, avoid overcooking. A meat thermometer is your best friend here. Pull the chops at 145°F and let them rest before serving to lock in all those flavorful juices.
