Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • Pink gel food coloring
  • ½ cup pink sanding sugar for rolling

Instructions

  • In a large bowl, beat butter and sugar together until creamy.
  • Add egg and vanilla, mixing until fully incorporated.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until combined.
  • Stir in pink food coloring until you reach your desired shade.
  • Wrap dough in plastic wrap and chill for 30 minutes. (Yes, chilling is necessary—no skipping!)
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll dough into 1-inch balls, then roll in pink sanding sugar for extra sparkle.
  • Place on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 9-10 minutes, or until the edges just barely start to turn golden.
  • Let cool for a few minutes on the pan before transferring to a wire rack.
