But here’s the thing – shawarma isn’t just for superheroes. It’s also the perfect meal for an Aladdin dinner and a movie night. No, there’s no shawarma scene in Aladdin (missed opportunity, honestly), but the flavors of this dish scream Agrabah street food. Spiced, juicy, and wrapped in pillowy pita, this is hands down one of my favorite meals to make at home.

I grew up on Mediterranean food. One of my family’s favorite spots was Carnival out in Hollywood, where we’d meet my aunt and uncle for the absolute best Middle Eastern food ever. It was always a feast 0 grilled meats, fluffy rice, creamy hummus, and warm pita straight from the oven.
Fast forward to now, and I’ve introduced my husband Matt to the magic of Middle Eastern food. And let’s just say, he’s hooked. (Seriously, if I made shawarma every night, I think he’d propose to me all over again.)
But Can’t You Just Buy Shawarma Ready-Made?
You could. In fact, Trader Joe’s sells a premarinated shawarma that’s actually pretty solid if you’re in a pinch. You can even grab the whole feast – pita, hummus, rice, tzatziki, and call it a day.
BUT. Homemade shawarma? A whole new world.
Marinating the chicken in fresh lemon juice, garlic, and warm spices? Next level. Roasting it until golden and crisp, then slicing it into juicy, flavorful strips? Life-changing. (Not even exaggerating.)
So, if you’re willing to put in just a little extra effort, trust me – you’ll never want to go back to store-bought again.

How to Make Chicken Shawarma at Home
Alright, let’s get cooking! This recipe is super simple, but the flavors are out of this world.
Step one: Marinate the chicken. This is where the magic happens. The blend of lemon juice, olive oil, garlic, and warm spices like cumin, paprika, and turmeric infuses the chicken with deep, rich flavors. If you can let it sit overnight, do it – but even a few hours will work wonders.
Step two: Roast it to perfection. Spread the chicken on a sheet pan with quartered onions and roast it at 425°F until beautifully golden and crisp on the edges. Pro tip: If you want extra crispy bits, give the cooked, sliced shawarma a quick sauté in a hot pan with a little olive oil.
Step three: Assemble your feast. Serve with warm pita, chopped cucumbers and tomatoes, a sprinkle of fresh parsley, and maybe some garlic sauce or tzatziki on the side. It’s a choose-your-own-adventure situation—stuff it into a wrap, pile it over rice, or eat it straight from the pan. No judgment.

The BEST Chicken Shawarma for Movie Night
Ingredients
- 2.5 lbs 1.13kg chicken thighs
- 2 lemons juiced
- 1/2 cup 120ml olive oil
- 6 cloves garlic minced
- 1 teaspoon kosher salt
- 2 teaspoons black pepper
- 2 teaspoons cumin
- 2 teaspoons paprika
- 1/2 teaspoon turmeric
- Pinch of ground cinnamon
- Red pepper flakes to taste
- 1 large red onion quartered
- 2 tablespoons chopped parsley
- 1 package of Pita
Instructions
- In a bowl, combine lemon juice, olive oil, garlic, salt, pepper, cumin, paprika, turmeric, cinnamon, and red pepper flakes. Add chicken, coat well, and marinate in the refrigerator for 1-12 hours.
- Preheat oven to 425°F (220°C). Grease a sheet pan with olive oil. Toss quartered onion with chicken, then transfer to the pan.
- Roast chicken in the oven for 30-40 minutes until browned and cooked through. Let it rest for 2 minutes, then slice into strips.
- For extra crispness, sauté the sliced chicken in a pan with olive oil.
- Serve the chicken with parsley and a variety of toppings like tomatoes, cucumbers, pita,garlic sauce, store bought pita, feta, or rice. Enjoy!
